For an ultra-moist and tender chocolate cake, combine oil, milk and boiling water in equal proportions for optimal results. This combination ensures the cake gets an elegant rise while staying extra soft and moist due to the vegetable oil fats and protein from milk providing structure to the batter; making this an exceptionally durable cake without drying out quickly as may happen with other recipes. The temperature of boiling water also plays a factor in its moisture-retaining abilities.

This cake uses unsweetened cocoa powder for its deep chocolate flavor without being too sweet. Regular cocoa will still provide some chocolatey taste, but won’t achieve as dark a hue as with unsweetened cocoa. Quality chocolate makes all the difference for taste; I prefer Dutch processed cocoa as its less bitter than regular unsweetened cocoa and has an exceptional taste profile.
